Chicken and Rice in the Instant Pot

  • Prep Time :
    5 min
  • Cook Time :
    60 min
  • Ready Time :
    1 hour, 5 min

  • 6 Chicken Thighs
  • 3 cups Brown Rice This brand specified 2.5 cups water per cup of rice.
  • 6 cups Chicken Broth
  • 1.5 cups Water
  • 1/2 tbsp Better Than Boullion
  • 1 tsp Paprika
  • 2 tsps Fine Herbs
  • 2 tsps Pepper
  • 2 tsps Salt
  • 1 cup Chopped Carrots
  • 1 cup Chopped Celery including leaves

Liz hasn’t been feeling well, and wanted something soupy.  This experiment was highly regarded, but I do want to try making it brothier.  Super easy prep, and extremely tasty!

I put the rice and broth in the InstantPot and set it on Saute while I chopped and added everything else.  Then I put the lid on and set it for “Multigrain” at 30 minutes.  It took around an hour to get up to temp and then cook.

I meant to put some onions in it, but forgot. The rice I used for the above was Goya brand brown rice, which specified 2.5 cups of water per cup of rice, may need to adjust liquid if other proportions are specified. It needed a bit of salt on the table, so I need to play with that a bit. Or do I? When I opened the pot, it looked souper soupy, but then I stirred it and it thickened up. Liz added some more broth to make it more soupy. Next time I might try reducing it to 20 minutes of cooking to make the rice firmer, or maybe reducing the rice or trying Riceland brand which specifies 1:1 of water to rice.
