This casserole is easy but very tasty. A friend of mine said "I usually don't like casseroles, but this is great!"

- 1 cup Sour Cream
- 1 cup Chedar Chese
- A Dozen Yellow Squash
- 1 Bag Cornbread Stuffing Mix
- 2 tsp Salt
- 1-2 Tbsp Coarse Ground Pepper
This is a big hit among myself and my friends. It’s fairly easy, and very tasty.
Pre-heat the oven to 350 degrees.
Chop up the onions and fry them over medium-high heat until they caramelize. While they’re cooking, chop the squash into one inch cubes.
Add the squash, salt, and pepper to the onions and cover. Cook over medium-high heat for around 15 minutes, until the squash softens. It will release much of it’s water at this stage.
Add the sour cream, cheese, and 3/4 of the bread crumbs, and mix well.
Spoon into a baking dish and spread even.
Add remaining breadcrumbs to the top.
Cover with aluminum foil, and bake for 45 minutes.
Uncover and bake 15 more minutes to brown top.
Let sit for 15 minutes to cool and serve.
